This Wikipedia article (DTP) covers the subject well. However it is worth observing there is a difference between the "amateur" programs like Microsoft Word and Microsoft Publisher and the professional ones like QuarkXPress and Adobe InDesign. The latter will produce better results, but require more effort. The difference between Word and Publisher is that the former is based on text flowing down a page, whereas the latter is based upon text and pictures in boxes arranged on the page. Recent versions of Word have more DTP features, but Publisher has more flexibility when it comes out output, such as producing A5 booklets on A4 paper and getting the pages in the right order.

One that is attractive to missions is Scribus because it is free.
