Course 308 - Food Services (3 credits)

An introduction to the operations of a rescue mission food service. Topics include nutrition and menu planning, principles of food procurement and purchase, food handling and preparation, systems of serving and food service equipment, sanitation and health standards, budgeting and cost controls, preventative maintenance, record keeping, inventories. Also includes a look at using volunteers and clients in rescue mission food service operations.

I had already accepted the job as Shelter Director a few months before I graduated and I've been there close to 2 years, have a $300,000 budget for a 30 bed homeless shelter, most of the residents are mentally ill or suffer from addictions, hence the homelessness. Right from day one I used the training from City Vision College (formally Rescue College). One of my first tasks was to terminate and rehire and I referred to the legal book from one of the classes. Programs of Study

A. Certificate Program
The Certificate in Urban Ministry is granted to students who successfully complete 30 hours of City Vision College course work. Since each course is worth 3 credits, students must take 10 courses to receive this certificate.

Dale's Story: From Prison to Rescue Mission Chaplain

In December of 1990 I came to the Rescue Mission of Salt Lake in Utah. I been out of prison for about 6 months at this time. I was in prison for grand theft because I was supporting a drug habit. I had been homeless at times even before I had entered the mission in Salt Lake. While at the mission in Salt Lake I heard about the Spiritual Training Program and decided to see if I could get on it mainly because it was cold outside. After being there for about a week and hearing the Gospel I turned my life over to Christ.

Though I had accepted Christ when I was a teenager, it was not until my mid-twenties that Christ became real to me and I began a serious effort to follow Christ. My Christian walk led me to Holmeswood Baptist Church where I soon became very involved in several different areas of ministry. The area that gave me the most satisfaction was in the Missions area. I discovered I enjoyed working with ministries that helped the poor and needy.
